Tableau — Restaurant Review | Condé Nast Traveler

What were your first impressions when you arrived? Tableau feels very private in that you must pass behind the What’s the crowd like? Wynn receives its share—perhaps more than its share—of celebrity visitors, and this is where they brunch if they don’t choose in-room dining. There’s almost always a name you know here trying (not too hard) to go incognito. It is also a power breakfast spot for the rest of the Strip, and relaxed experience for guests in the Wynn hotel who find brunch as important a part of entertaining as dinner.
What should we be drinking? One of Tableau’s real treasures is its kitchen juice bar, which produces fresh-pressed juices like “Purify” (honeydew, green apples, kale, spinach, cayenne, agave, and celery) and smoothies like a silky chai with banana and coconut. If you can’t commit, try a juice flight (a favorite). There are also endless cocktail options via prosecco, mimosas, bellinis, pink sangria, and rose. And there’s a great brunch signature cocktail program of garden-inspired coolers. This being Wynn, you can start out with a bottle of 2008 Dom Perignon or a range of bottles and by-the-glass wines from all over the world.
Main event: the food. Give us the lowdown—especially what not to miss. The menu here is thoughtfully orchestrated to consider every diner. The options range from a traditional benedict (with two variations—smoked salmon and short rib), to big, fresh salads, short rib cavatelli, lobster burger, and plenty of vegan and vegetarian dishes. A favorite: a sunny burrata with orange, grapefruit, blood orange, pomegranate, and basil. Traditional bread service circulates at the beginning of the meal, and brunch and lunch finish with something tiny and sweet, like a selection of mini macarons.
And how did the front-of-house folks treat you? The staff at Wynn is formal but warm. Get up for any reason and your napkin will fold itself and return itself to the table, for instance. Courses land like clockwork, and the staff is well-versed in little-but-crucial details like clearing away plates at the same time rather than leaving a single diner still eating on their own. They know not only what they’re doing, but how and when to do it; to refill the hot water in your tea the moment before you ask; and always to give you a special little stool just for your handbag.
What’s the real-real on why we’re coming here? This is the place to impress a business contact, have a romantic morning-after-a-big-night breakfast, meet with your best friends.

Tableau feels very private in that you must pass behind the Wynn Tower Suites elevator bank just to find it. But once you do, you’ll walk into a little treasure box of a restaurant that opens up into a brilliantly sunny conservatory that looks right over a sparkling pool. You’ll want to ask for a table in the conservatory room, whose light pistachio color was specifically “borrowed” from Marie Antoinette’s Petit Trianon. It has the same kind of elegant, summer house effect as certain rooms in it inspiration home outside Paris. The room, with its artfully placed flowers and mini teapots, custom-backed chairs, and intensely pretty views (and people) is one of the most intimate and civilized rooms in Las Vegas, period.Wynn receives its share—perhaps more than its share—of celebrity visitors, and this is where they brunch if they don’t choose in-room dining.
