Elegant New England décor is unfussy, almost rustic, changing each season with an array of local flora seen through windows and on each table in the restaurant’s luxurious dining rooms, situated in beautifully restored barns. Quirky sculptures top the crisp white linen-covered tables, at which you’ll encounter classic European service that yields a sense of consummate hospitality. Chef Derek Bissonnette’s four-course prix-fixe menu ($109) evolves each week, and there are plenty of choices within each course. A six-course tasting menu ($145) is also available. Maine is soundly represented in dishes such as a trio of Spinney Creek oysters: raw and mignonette sorbet; crispy and caper aïoli; poached in smoked salmon chowder and vol-au-vent. The same is true for the seared local halibut with warm tartar sauce, malt vinegar jelly, Peak Organic Nut Brown Ale foam and pea raviolo; or lobster and homemade fettuccine with carrot, ginger and snow peas in a Cognac-coral butter sauce. Dessert may be a Maine blueberry soufflé, lemon sorbet and mascarpone sauce. For an additional cost, opt for well-chosen wine pairings from the 7,000-bottle-strong cellar. For a casually elegant alternative to The White Barn Inn Restaurant, its seasonal bistro, open nightly, offers an à la carte menu with everything from soups, salads and burgers to seafood and meat entrées. Reservations are not required and the dress code is more relaxed.
