The new restaurant, located within the Hammer Museum, is Waters’ first new restaurant in decades. The news has been out for a while, but the restaurant’s name hasn’t been released. According to the museum’s website, the new restaurant will be called Lulu. The restaurant has plans to open sometime in late Fall 2021. Chef and cookbook author David Tanis joins Waters for this venture near the campus of UCLA.

Tanis worked with Waters at her critically acclaimed Berkely restaurant Chez Panisse, which Waters opened about 50 years ago. The duo will highlight seasonal produce from local farms. The team will “highlight wholesome foods sourced from local farms dedicated to responsible and regenerative farming practices,” according to a representative for Hammer Museum.

“Lulu is a shared celebration of good food that is good for the planet, a restaurant committed to local, regenerative food sourcing and design,” according to the Hammer Museum website. “Prioritizing sustainability in every way, Lulu will actively model a better world through food. The foundation of the restaurant’s mission is to procure directly from small, nearby farms practicing regenerative organic agriculture, which results in wholesome, delicious food grown using methods that combat the climate crisis.”
