I was so excited for Carbone, because everyone was raving about it. I was so upset because my pasta was so salty it was inedible. Everything else tasted amazing, we had so many complimentary starters which I was thankful for! Their mozz and peppers were great, the corn amazing! But the pasta, the star of the show, was so inedible we couldn’t finish our meal. I had to squeeze that sauce out of the noodles to eat it. I definitely think it was made incorrectly, but everything else was so good I can’t tell if that was an accident or if it’s actually supposed to taste that way.

Is it over the top expensive, yes. Will you have a better Italian dining experience in New York City, or possibly beyond? No.From the ambience, to the music (mostly sinatra) , to the staff, you feel like you are in an old Hollywood mobster film. It’s a great environment, and intoxicating. It definitely makes you purchase several bottles of wine. We made sure to try all of the staples. Below are my rankings on must-try dishes. Also, my big honorable mention is the bread and cheese that they start the meal with. They basically give you marinara bread, Texas toast, plain bread and butter, and a piece of delicious cheese even before you order a dish.Spicy rigatoniTortellini RaguMeatballsBronzinoOystersCesarAgain. There were no misses. But the top 3 I would 100% get again.

The atmosphere is amazing here, very old school & classy. They bring you a delicious bread basket with cheese, pickled cauliflower & salami complimentary. We ordered the spicy vodka rigatoni and the lobster ravioli for our main entrees. I wouldn’t say it’s the best pasta I’ve had but it was good. What did stand out was the caprese salad! It was outstanding. Really friendly staff as well. It’s worth the hype.

Amazing food and even better ambiance. Pricey for the portion but I guess you pay for the experience and the pictures… The starting bread and mozzarella are great. In fact it may be the best mozzarella I’ve had at a restaurant to date. The caprese was probably the best caprese I’ve had also. The spicy rigatoni lives up to the hype, especially for vegetarians. I also got the tortellini in a vegetarian red sauce it was some of the best vegetarian tortellini I’ve had. The Nutella tiramisu is not that great though.

Clearly Carbone doesn’t need my good review to stay in business, but since I was a major skeptic coming in, I’m writing one for anyone else like me! My husband and I finally had dinner after four months of trying to get a reservation at a Normal Dinner Time (it took Amex concierge’s help). Looking at the prices and the fact that a pasta with..nothing but sauce seemed to be everyone’s favorite dish, we expected this would be a fine-but-not-worth-the-$$ New York dining experience crossed off the list.Well, we were so wrong — and altogether impressed. The Carbone atmosphere is real: feels clubby, secret, a world away from the bustle of NYU Land surrounding it (and the ’50s doowop soundtrack is A+). Our waiter was super nice and unpretentious. The on the house little plates — spicy salami, parmigiano reggiano, pickled spicy cauliflower and excellent bread — are a nice pre-meal touch.We ordered the off menu meatballs, linguini vongole and spicy rigatoni — a perfect amount of food for two people (we considered also getting the cherry pepper ribs; it definitely would have been overdoing the food quantity). The meatballs are loosely packed and light as they go, definitely the best we’ve had in a restaurant in some time. The linguini sauce is delicious, super garlic and herby and a bit spicy, and packed with clams. And the spicy rigatoni–well, I get the obsession now. It’s the most flavorful vodka sauce I’ve ever had, one you’ll want to scrape up w a spoon when the pasta is gone. We were too full for dessert, but the complimentary rainbow cake was …the best rainbow cake I’ve ever had.All in all, Carbone really won us over, and is certainly the most standout red sauce Italian we’ve had in the city.

The staff is very attentive as they provided us with amazing hospitality. When you come here you have to order the Spicy rigatoni . The rigatoni is all that it is hyped up to be but I personally didn’t think it was that spicy . They say the plates are family size but I think if you want to order the plate for your self it would be fine honestly the portions aren’t huge . We also ordered the Chicken Scarpariello , the chicken was tender . It had a mix of flavor , my partner personally didn’t like the sauce , I thought it was ok . Still worth ordering regardless . For desert we ordered the carrot cake . I believe it had a ginger bread mix . Keep in mind I do not like cake but I must say this desert was mouthwatering, it was soft the ice cream and crumbles that was paired with it complemented it well . It was really great . The only reason I’m giving Carbone 4 stars is b/c I wish the food was hotter , it was less than warm and I didn’t like that but I definitely would go back . It is hard to get a reservation but not impossible. Can’t wait to go back

Definitely hit the spot with solid Italian dining and excellent service. We ordered the spicy rigatoni, beef carpaccio, eggplant antipasta, lobster ravioli, hazelnut cake, and tiramisu. Lobster ravioli and hazelnut cake definitely exceeded my expectations. Spicy rigatoni was very flavorful and is certainly worth coming back for. Cocktails were STRONG which made the food experience even more enjoyable.

..a place THIS hyped, this famous, and this hard to get into that even cool guy Drake raps about it. Surely it can’t live up to the expectations, especially when all I see on the menu are basic Italian staples I’ve been eating since I left the womb. But it was NOT a letdown. Started with Meatballs and the famed Caesar Salad. Solid. And I’ll contradict myself here a bit…the Caesar was maybe a tad overrated because I’ve been hearing about this thing going on a decade now. But then again, how good can a Caesar salad be? Good. Just good. And I did love the giant croutons, but still made me wish I got the also-popular baked clams.Ok, now for the notorious…glorious…Spicy Rigatoni Vodka, because that one’s a must get, right? Amazing. Different (and better) than every vodka-sauced pasta iteration you’ve ever had. Made it worth the trip and every garbage juice puddle on Thompson Street I stepped into with my day old Nike Killshot II’sDidn’t get the gargantuan Veal Parm like everyone else does. Was torn between that and the Veal Marsala. Very happy with that call. The veal wasn’t pounded thin like you’re probably used to. It was more like a bone-in NY strip steak, nicely carved and ready to share. A great cut and an even better sauce.Service was great. Music, decor, and overall ambiance was, for lack of a better word, just really cool. Felt like a scene out of Goodfellas, except the wiseguys were missing, probably in the even-more-exclusive back dining room that a mere peasant like you or I will never step foot in.Oh and get the carrot cake.

They want you to buy other stuff, but the other stuff isn’t as good. For example, wasn’t impressed with the meatballs or spaghetti pomodoro and my colleagues didn’t think the oysters were that great. Vibe is great during dinner and ok during lunch.

Worth the wait!

Had high hopes after a lot of back and forth booking a reservation last minute and it did not disappoint. If only we could eat more because I def want to try everything on the menu. The spicy rigatoni was amazing (not very spicy) and perfectly al dente. Lobster fra diavolo was delicious and fresh (again not too spicy). Potato louie were crispy from the duck fat. The carpaccio with the addition of fresh porcini shaved on top was 1 of the best things ever. Next time I’d skip dessert and eat more pasta! A great place to go with a group so you can try a bit of everything. Service was attentive without being over bearing. I didn’t find anyone to have an attitude.

Absolutely my favorite restaurant in Manhattan! The wonderful experience starts with the waiters (*captains*) who are super attentive and helpful, and all the people who works there are extremely friendly and attentive. They start by serving you a basket of delicious breads, salami, pickled cauliflower and a hunk of Parmigiano Reggiano, all very tasty and courtesy of the house. As appetizers, the best in my opinion are Prosciutto & Mozzarella, Carpaccio Piemontese and Caeser alla ZZ, which they prepare at the side of the table and the croutons and sauce are the best I’ve ever tasted. The Tortellini al Ragu is absolutely my favorite dish in town, I order it every time, but the Lobster Ravioli and Spicy Rigatoni Vodka along with Veal Parmesan are also a great choice. For dessert you MUST try the carrot cake, I’m not a big fan of carrot cake, but the one they make is inexplicable, I haven’t had such a good dessert in a while. The lemon cheesecake also tastes amazing, I used to order it all the time, but the carrot cake has now won my heart! Everything they serve is very tasty, which for me is the difference between most of other restaurants where the food is very bland for my brazilian taste. And that’s what makes me like Carbone so much, not to mention the service again, of course, because being treated with attention is something difficult in this city where everyone always seems to be in a hurry. I’ll be coming back again and again and again!!! Reservations are made through Resy a month in advance, they are available at exactly 10 am and are gone in a matter of seconds, be quick!

Overpriced and overhyped

We were expecting an amazing experience, but didn’t really receive that. We ordered 11 dishes and shared as a group of four so we all got to taste everything. There were a few items that were really good, the spicy rigatoni, clams, lobster ravioli. However the rib eye was mediocre at best, I’ve had better at your basic $30 steakhouse and for it to be over $100 is pretty wild. The tiramisu was also the worst one I’ve ever had. No one had more than a bite, I couldn’t recommend not getting it anymore. The service was decent overall, but as some others have said, there was a smugness about the ones we interacted with. Overall it was still a pretty good time, especially if you like oldies because they were playing that all night, but I don’t think we’ll be back, especially with how hard it was to get in.

Yes, it is true that obtaining a reservation is quite an accomplishment. The restaurant is unassuming from outside and very basic decor inside. It exudes an old Italian charm that reminded us of our trips to Italy. Our server, who was actually from Mexico, was very personable, very attentive and the perfect server. We ordered the Mario’s meatballs and they were superb. I have to admit that the oysters posillipo was not a favorite…have to give a nod to those large flavorful oysters that we eat in New Orleans. My daughter thought the spicy rigatoni vodka was wonderful. I am from the Midwest so I am very particular about steak and how it is prepared. My ribeye Diana was tender, packed with flavor and done to perfection. Carbone’s has a line of spaghetti sauces that can be purchased in higher end grocery stores across the United States. I found the sauce in California and when I returned home I was able to buy them in Minnesota. The store bought sauces were wonderful and under $10 per jar.

Yes it’s insanely hard to get in. Yes you might have to call every day and pray for a cancellation. But you’ll be glad you did. I’ve never been to a restaurant where it seems like everyone loves working there and truly takes pride in their job. The waiters and sommeliers and everyone that works here have that vibe. And duh, you have to try the spicy rigatoni. It’s a given.

This place is famous for a reason! I was determined to get a dinner reservation and was lucky enough to snag one during our NY stay. The service is beyond exceptional, almost overwhelming. I felt like all of the staff was attentive and friendly. Loved that Ricky our server was Italian, made it feel so authentic. The pasta and ravioli was amazing. The only thing I did not like was that the seating we so close together since the restaurant is small and quaint. Luckily the reservation was a right at opening time and we asked to move to an edge seat and staff were accommodating. A beautiful place for a romantic dinner if you’re lucky to get a reservation!

If you manage to get a reservation at Carbone, you HAVE to get the Oysters Posillipo. A very underrated appetizer. The spicy rigatoni was okay – nothing too special, but our waiter recommended to order with the special of the day which was mixed meat meatballs, which made it better. Also, skip the tiramisu and get the lemon cheesecake. As someone who’s not a fan of lemon, the cheesecake exceeded my expectations. Moist with a crisp base.

Sadly, what was once an amazing concept – upscale mid-century American-Italian – is now a caricature, by design.Reservations are essentially impossible unless you have a connect (and ALL prime time tables are reserved for connects – you CANNOT get an 8pm table here, ever). The rest are jammed with tourists and out-of-towners who are ok taking an 11pm reservation for the pleasure of making Jeff Zalaznick more wealthy.That all might be ok if the food hadn’t seriously gone downhill the past few years and the prices continued to rise. Now the only good thing about this place is the fact that they kept the old Rocco’s sign.

We both got the spicy rigatoni vodka pasta– the sauce was spicy and flavorful which was good but otherwise a pretty plain pasta. Not sure if the person taking our order was the manager or a server (he was dressed in a suit), but he was very brusque and made us feel rushed. He seemed annoyed since we didn’t order drinks or dessert. I noticed that he made a point to ask the couple next to us, who arrived at the same time, how their meal was going and then completely ignored our table. The other waitstaff and the hostess were very nice though. Food- 3/5Service -3/5

I was lucky enough to score a reservation here, and it absolutely did not disappoint. I knew this was going to be my kind of place the moment a waiter waltzed up and gave me a totally unsolicited giant hunk of cheese. Which was delicious. The complimentary basket of bread (especially the foccacia with red sauce) was also excellent. From that moment on, everything from the wine (get the Oregon Pinot Noir – it’s fantastic) on to the dessert was epic. I started with the carpaccio pimentaro – which was the best carpaccio I’ve ever had. I progressed to the spicy vodka rigatoni which also exceeded even my very high expectations (it’s their signature dish) and truly was spicy. I had the chocolate hazelnut cake for dessert which was fantastic as well. The whole time, I was serenaded with 50s tunes from classic folks like Dion while also enjoying some of the best people watching New York has to offer. (To non-native New Yorkers, you have to do it on the DL while pretending to be totally disinterested.) The restaurant is intimate, authentically and lovingly decorated, and has outstanding service. Get to work scoring yourself a reservation here 30 days in advance because it is completely worth it.

Great Italian food that I can honestly say lived up to the hype. We ordered 3 things: the Veal Parm, Baked Clams, and the Spicy Rigatoni Vodka. Highly recommend the Veal Parm and Baked Clams. Surprisingly, though it’s like the most popular item on the menu, I’d say you could skip on the Spicy Rigatoni Vodka. The pasta was perfectly al dente and the sauce super creamy but not overly heavy, but I just felt it was lacking a bit of flavor (maybe could’ve had a bit more tomato paste). The Veal Parm, on the other hand, is CHEF’S KISS!! Perfectly cheesy goodness on top of tender and breaded veal cuts. And the Baked Clams omg…please get that also. It’s a mix/variety of different toppings on the clams but they’re all amazing. My favorite was probably the pesto one. The starter they serve you is by far the best bread starter I’ve ever had at an Italian (or any American) restaurant. The bread already starts of as a super loaded garlic bread on its own, and then it comes with fresh mozzarella and salami on the side for pairing. Ugh amazing.

First, getting a reservation here is extremely difficult- it is like the supreme drop of resy. If you are lucky (and patient) enough to get a reservation, it is definitely worth a visit!The bread basket and the accompanying pickled cauliflower, salami, and parmesan cheese were amazing. I got the baked clam trio, and while the clam with the uni on top was amazing, the other two were just ok. I also got the caesar salad which was delicious and their giant croutons are to die for. Would choose the salad over the clam trio in my opinion!On to the main, I got the signature spicy vodka rigatoni and meatballs on the side. I loved the spicy vodka sauce, but thought the the pasta itself was slightly overcooked for my preference. Felt like it needed a minute less of cook time to have that perfect al dente texture. The meatball was so flavorful and juicy, and would definitely recommend. For dessert I got the tiramisu. While it was delicious, and it tasted like it may have had some orange liqueur-esque flavor, it wasn’t my favorite. I personally love the super wet, pudding like tiramisu and less the “cake style” tiramisu. The service was amazing and the waiters were super nice and accommodating. While I do recommend coming here at least once, it felt a little overhyped.

They were mostly average. The truffle tortellini was $75 and tasted like it was made for $7.50. The rest of the food was just ok. Bill was $315 and I expected way more from a place like this. There are other Italian places in Vegas that are more well deserving of your funds.
