Grease Traps and Grease Interceptors – Stop The FOG

Grease Traps and Grease Interceptors are designed to manage sources of fat, oils and Grease (FOG) in a commercial kitchen. Both traps and interceptors are installed on outgoing waste water lines to collect grease, etc. and prevent it from entering public water systems. According to the Uniform Plumbing Code (UPC), the difference between a Grease Trap and Grease Interceptor is the capacity of the unit. A grease trap has a flow rate of less than 50 gallons per minute, while a grease interceptor has a flow rate of more than 50 gallons per minute.

Because a grease trap tends to be a smaller unit, it is typically installed directly beneath or adjacent to a sink or other outlet where water and grease may flow together. You may have multiple grease traps, each located at a single source of water/grease. A grease interceptor is much larger and therefore is typically located a few feet underground, sometimes in the floor of a facility, other times outside the facility. For foodservice establishments with floor drains with high volume of waste water exiting, a grease interceptor is the likely choice.
