Hemings & Hercules — Hatchet Hall

The Hemings & Hercules dinner series (featured on the Netlfix docu-series High on the Hog) was a limited event that was hosted over a six week period in November, 2019 and again in February, 2020. The eight course tasting menu, created by former Chef de Cuisine, Martin Draluck, and former Executive Chef, Brian Dunsmoor, was inspired by the work of America’s first two celebrity chefs, James Hemings and Hercules Caesar, who were enslaved by two of America’s founding fathers. The dinner aspired to highlight the historical roots of Black cooking in America and the influence it has had on modern cuisine.

In the time since hosting Hemings & Hercules, Martin has moved on to Post & Beam while Brian has opened his own concept in Glassell Park. We encourage you to visit Martin at Post & Beam as he works to continue the Hemings & Hercules series.
