Each 6-bone rib weighs about 10 kilograms and slow roasts for 5-6 hours.

“We travelled to Buenos Aires and looked at the way the Argentinians cook on fire and thought that we would interpret what they were doing but in a British way and make the fire pit the central heart of the restaurant,” said co-owner Sophie Bathgate.

The 1-ton fire pit is made out of steel and was made bespoke for the restaurant.
