It's not a complete solution by any means, but I think if you now treat hiring like a marketing project, you have a better chance of finding job candidtates.  Help wanted signs, boring "Now Hiring" posts on Facebook and Craigslist ads no longer make you stand out.  You are not only competing for employees with other restaurants, but also places like Amazon and Uber.  Many young people would rather have 2-3 side hustles than work in restaurants.  How can you market your restaurnat to be a place that draws people to apply?  You may not be able to pay the types of wages of an Amazon, but you can certainly develop a culture and environment where people want to work.  Provide employees opportunities to learn and grow.  Telling a candidate to come in for an interview in 2 days no longer works either.  You need to talk to them ASAP.  Even jump on a Facetime call with someone right away.  Attracting talent….think of those you have hired that ARE great….what is their background?  Build from their success.  Start a referral program where your existing staff can earn incentives brining in others like them.  Talk with your employees more than you ever did.  Don’t assume why people stay or leave…ask them why and be open to negative feedback.  REMARKET TO PAST APPLICATIONS….build an email list!  Text them.  Stay in touch, market your culture, your story…just like you do when marketing to your customers.  Offer a free drink to young people, get to know them, build a relationship…even if they ghost you.  Rethink ways that you can structure jobs and your menu so that years of experience are not required.  Hiring people without experience?  Does the person have enthusiasm and willingness to learn?  You can develop these people…but do you have the willingness to teach and guide them…
