Our Story

Co-owner Larry Wilson started his career in technology by working for several decades in the Oil/Gas industry as a business analyst designing and implementing proprietary applications, hardware, and VR systems.

Between 2014 and 2020, while working on several IT projects for Franks International, Larry traveled throughout Southern Louisiana. That is when he was introduced to boudin and cracklins. Larry was so enthralled with the boudin Cajun/Creole cuisine, that he decided to study the history and science behind boudin making. In December 2021, Larry and his wife Coetta, opened The Boudin Company in Rosenberg, TX.

The Boudin Company is famously known for its modern style of boudin creation. Our homemade boudin is a mix of a traditional style recipe with a modern flare. A modern approach to classic cuisine.

Our customers enjoy eating at our boudin restaurant because of the kind of home-style comfort food we sell. We prepare our boudin and other creative delicious dishes on site.
