Babalu is a restaurant that started in Jackson, MS and now has locations in Memphis with more coming soon around the south! The vibe at Babalu is fun, casual, and cool with a little bit of cozy thrown in for good measure. Their tag line is “Southern food with Latin Flair.”

Everything I’ve had at Babalu is good, but y’all, the guacamole! They make it table side and although it is deceptively simple, it is perfection!

When you are seated you will be asked if you want guacamole and your answer should be, YES. You’ve really got to try the guacamole at Babalu! (That is, unless you don’t like cilantro – the Babalu Guacamole is cilantro-y…bless your heart if you have that genetic thing that makes cilantro taste like soap….and I mean that sincerely)

In addition to their amazing guacamole Babalu has a selection of Tapas or small plates to share. Try the patatas bravas. You won’t be sad you did.

There are also a variety of tacos including interesting fillings like duck and pork belly. The main courses include items such as shrimp and grits and braised beef short ribs. They are also known for their huge, juicy hamburgers.

Babalu has a full bar and some really fun cocktail options so definitely check out the drink menu and especially check out their drink specials.

But really, you are there for the guacamole. No matter what else you decide to eat start with the guacamole. By the way, the Babalu the guacamole is served with the most delicious seasoned house chips.

How to Make Babalu Guacamole

The ingredients:

  • 2 of the best medium to large avocados you can find. Perfectly ripe, soft without being mushy…don’t worry, I’m not going to tell you how to select an avocado, if you are a guac aficionado you already know how to pick out a perfect avocado.
  • 1 Tablespoon chopped green onion
  • 1 Tablespoon chopped red onion
  • 1.5 Tablespoons freshly squeezed lime juice
  • 1.5 Tablespoons minced fresh cilantro
  • 1.5 Tablespoon minced sun dried tomatoes packed in oil
  • salt and pepper to taste

The Optional Ingredients

  • Diced jalapeno
  • Bacon bits

Yep, that’s it!

Throw all that into a bowl and mash it up with a fork to your desired consistency and serve immediately.

You won’t have to worry about it turning brown. It won’t last that long!

Extra Tips for Making Babalu Guacamole

  • Obviously depending on the size of your avocados the amounts of your other ingredients might vary. Taste as you make. (NOTE: the avocados I used in these photos were small so I used part of a third one to make the proportions right)
  • Don’t leave out the sun dried tomatoes! In my opinion this is the ingredient that really sets this guacamole apart from the rest.
  • When we have the guacamole at Babalu we don’t add the optional jalapeno. At home we do. At home you can taste your jalapenos before you add them so that you know how spicy they are. This allows you to control the amount of spice in your guacamole to your own taste preferences.
  • If you try adding bacon let me know what you think! We haven’t tried this yet. This guacamole is just SO good and I think I am afraid that the bacon would overpower all the other fresh flavors. But I could be wrong, so…leave a comment if you try it with bacon and love it…or not.
