Big, dark and macho, this handsome stallion is located next to The Saloon at the foot of the Extron office building, all of which share the same owner. There may not be many cowboys in these parts, but there are plenty of decorative elements and music they’d covet here.

The menu is of course meat-centric, but also focuses on seasonal vegetables grown on their own farm. Here, a caprese salad is taken to creative peaks when their garden offers more than 90 heirloom varietals. Also sample crisp popovers served with sweet homemade tomato jam. The prime rib is ultra-tender with jus, horseradish sauce and a cast-iron skillet bubbling with cheese-topped scalloped potatoes. Top off the repast with such comforting desserts as a pecan tart with vanilla ice cream.
